In Season: Pisces Breakfast

Before heading out into the world, treat yourself to a delicious and nutritious breakfast fit for a Pisces:

Spinach Omelet

1 C fresh chopped spinach
2 egg yolks

Preparation

Carefully wash fresh spinach.
Remove stems.
Sautee spinach with several drops of olive oil in a skillet over low heat.
Set aside.
Whisk or beat egg yolks.
Add a dash of sea salt and pepper.
Pour a little oil into the skillet and heat on low.
Pour in beaten egg yolks.
Sprinkle spinach over the eggs flipping once or twice until done.

Spinach season runs from March through May in the United States. This jade-colored veggie is not only high in iron but also vitamins K and C as well as folate and calcium. Spinach is the perfect fresh fuel to balance nervous exhaustion.

Egg yolks are a good source of protein for Pisces.

Lamb, egg yolks, oysters, cheese, yogurt, nuts, barley, dried beans, whole grain cereals, beets, spinach, onions, lettuce, dried prunes, dates or figs, fresh apricots, blood oranges, kiwi, lemons, limes, and pineapples.
